Ambali / Kunu
Commonly used for probiotic benefits and excellent for digestion. A time-honoured fermented drink from South India.
Wash the millet thoroughly and soak in water for 12 to 48 hours (changing water periodically to prevent odor).
Wash the fermented millet again. Blend with ginger, cloves, and chili peppers until smooth.
Strain the mixture through a cloth to remove chaff.
Let the strained liquid sit for 7 hours or overnight until it settles, then pour off the clear top liquid, leaving the thick sediment at the bottom.
Add hot water to the sediment and stir continuously until it thickens into a light porridge-like consistency.
Add buttermilk, cumin powder, or sweeten with jaggery and serve chilled.
Shelf-Stable Powder Mix
A shelf-stable powder that can be quickly mixed with milk or water. Perfect for busy mornings and on-the-go nutrition.
Wash and soak millets and legumes for 4–6 hours, then drain.
Optional: Sprout them for higher nutrition, then shade-dry.
Dry roast the millets, nuts, and spices separately until they become aromatic.
Once cooled, grind everything into a fine powder.
Mix 2 tablespoons of this powder with 1 cup of water/milk, cook for 2–3 minutes until thick, and sweeten with honey or jaggery.
No Dairy · Vegan Friendly
A refreshing, dairy-free smoothie made with cooked Kodo millet, fresh coconut, and natural sweeteners. Ready in minutes.
Blend all ingredients until smooth.
Serve over ice for a refreshing, nutritious drink.

Expert advice to get the most flavour, nutrition, and shelf life from your millet preparations.
Always roast millets before use to improve digestibility and increase shelf life. Dry roasting brings out a nutty, aromatic flavour that enhances every recipe.
For a thinner drink, increase the proportion of water or buttermilk. For a thicker porridge, increase the millet flour or sediment. Adjust to your preference.
Ginger and pepper are commonly added for warmth and health benefits. Cardamom adds aroma, while cumin aids digestion. Experiment to find your perfect blend.
Store millet powder in airtight glass or steel containers. Roasted millet flour stays fresh for 2–3 months. Keep in a cool, dry place away from sunlight.
Soaking millets for 4–8 hours before cooking reduces anti-nutrients and improves mineral absorption. This simple step makes millets even more nutritious.
Rotate between different millets each week for balanced nutrition. Each millet offers a unique nutrient profile — diversity is key to maximum health benefits.
