Millet health drinks are nutritious, gluten-free beverages made by fermenting, soaking, or roasting millet grains to improve digestibility and maximize nutrition.

Traditional Fermented Millet Drink

Ambali / Kunu

Commonly used for probiotic benefits and excellent for digestion. A time-honoured fermented drink from South India.

Ingredients
  • 1 cup Millet (Foxtail, Finger/Ragi, or Pearl)
  • 4 cups water
  • 1 tbsp ginger paste
  • 1 tbsp cloves
  • 2 dry chili peppers
  • 3 tbsp sugar or jaggery (optional)
  • Buttermilk / Curd
Instructions
Soak

Wash the millet thoroughly and soak in water for 12 to 48 hours (changing water periodically to prevent odor).

Blend

Wash the fermented millet again. Blend with ginger, cloves, and chili peppers until smooth.

Strain

Strain the mixture through a cloth to remove chaff.

Ferment

Let the strained liquid sit for 7 hours or overnight until it settles, then pour off the clear top liquid, leaving the thick sediment at the bottom.

Cook

Add hot water to the sediment and stir continuously until it thickens into a light porridge-like consistency.

Serve

Add buttermilk, cumin powder, or sweeten with jaggery and serve chilled.
